We had this week our semester team meeting @amstelhouse to celebrate the amazing past summer season and to talk about the winter time now coming.
The last three months were very special for us. We had a great summer, breaking records and bringing up new actions. Our big House was almost constantly full of all kinds of nice guests. You must have heard of the cold Spanish tomato soup called ‘gazpacho’, but less known is its thicker Andalusian brother ‘salmorejo’, usually topped with cured ham and egg. Combine with a glass of chilled white wine, and Spain suddenly becomes very close. The best thing is that it is super easy to make, and moreover a great way to use up your bread left overs. Because the soup tastes best when it is super cold, we recommend to make the soup on a lazy afternoon or the night before so it can really chill down in the fridge.
PS! As this soup is super super healthy, this recipe is no summer exclusive. Indulge you winter immune system with this shot of power food!

Bulgur is a grain that is often used in the Turkish and mediterranean cuisine. It’s high in iron and fibers which makes it a healthier choice then couscous. Fresh fruits, bulgur and milk/yoghurt form an excellent breakfast, so cook some extra for the morning after.

Some people have the gift of being able to sleep 14 hours straight on a long international flights. If your name is not sleeping beauty, here are our 10 tips on how to survive a long haul international flight.
- Keep the blood flowing
Walk up and down the isles at least once during the flight to keep the blood flowing to your brain. CNN even shows you a few yoga tricks to easily do on board.
- Pick your seat on time and wisely!
If you’re the type that can sleep long hours on a flight, book a window seat. If you think you might have to visit the toilet more than once, book an isle seat.
- 3 seats for 2
When traveling together, reserve the seats in the isle and window. Good chance no one will be booked in the middle, and you’ll have a row to yourself. When the middel guy shows up, ask to switch. Everyone prefers an isle seat to the middle one so they won’t mind!
- Bring your own snacks
We don’t know about you but we yet have to discover the first airline that serves proper food. So your best bet will be a small supply of your own snacks. Think easy packable snacks like an apple, pretzels, carrots, granola bars etc. You will be so thankful you did. Drinks are readily available so be sure to hydrate well, it will make you feel less exhausted upon arrival.

This is a very easy stuffed and roasted sweet potatoes recipe that requests not much more then the time waiting for your potatoes to be roasted. Once roasted, you can top the potatoes with whatever you have in the fridge. We topped them with feta, black olives and avo. Hummus works great as well! You can eat the potatoes warm for dinner and keep the leftovers in the fridge for lunch the day after as it works great on a sandwich or in a salad as well!
