Ceviche is a traditional Peruvian dish consisting of fresh fish cooked raw in lemon juice and served with sweet potato and corn. We created a million different variations, always based on local or seasonal ingredients. Here’s one of the easiest, hostel proof ceviche recipes. We used rosemary, but you can add any herbs you desire. Coriander and basil go well together as well.
